favourites like Enchiladas and Fajitas are specialties, such as Ceviche (Barramundi
cured in lime), Mole Poblano (chicken cooked in a unique chilli
chocolate sauce) and Chile Verde (tender pork cubes cooked in
traditional green tomatillos and spices, served on freshly ground corn)...
With salsas,
moles {a general term for Mexican cooked sauces of which there are
nearly a dozen staples} and Guacamole made fresh each day, Tito
ensures the ultimate in flavour. Home made Tamales are also prepared daily
in the traditional way and wrapped in banana leaves for added taste and
texture.
